What I’m Reading: Unprocessed by Megan Kimble

Growing up, I was obsessed with reading. Every chance I was given, I dove into a storybook with the hope to simply learn something new. As I got older, it became increasingly difficult to focus on anything for longer than thirty minutes, yet I still cared to seek the knowledge that the little girl in me was yearning for. As a person whose goals include learning just about everything, I find it obligatory to immerse myself in as many realities as possible. As the semester approaches its long-awaited finale, I have found a clearer mind and an increasing amount of time to enjoy a book filled with hundreds of pages of someone else’s thoughts. My latest paperback goldmine, Unprocessed: My City-Dwelling Year of Reclaiming Real Food, shares the adventure of an Arizona magazine editor’s attempt to find the truth about unprocessed foods. Megan’s year-long journey of discovering the truth about what makes a food processed, along with her tales of trials and triumphs along the way, seemed to really hit home with a lot of what your average, health-interested person may assume. While I was incredibly fascinated by the content, her incredibly relatable tone captivated me. As well as tales of her journey, interviews, and extensive research, Megan provides tips on how we (financially unstable college students) can afford to maintain an unprocessed lifestyle, and even why spending that extra dollar or so on organic may be well worth it. As if her initial, perfectly imperfect grasp on nutrition was not relatable enough, her final destination proved that we can all “unprocess” our lives if we truly make the effort.
